I made this recipe to celebrate Swedish midsummer, and oh my goodness, it tastes like Sweden! It is very close to a Swedish shrimp sandwich I had in Norrland that I absolutely loved. I will have to make that soon.
For now, here is the open faced shrimp sandwich version.
Ingredients
[row]
[column size=’1/2′]
- Tunnbröd (purchased from IKEA) or bread
- frozen shrimp
- mayonnaise
- butter
[/column]
[column size=’1/2′]
- tomatoes
- cucumber
- hard boiled eggs
- dill
[/column]
[/row]
Directions
- Run your frozen shrimp through cold water until it is defrosted. Mix with some mayonnaise, just enough. If you do too much it may become watery.
- Butter your bread. Add sliced eggs, shrimp, sliced tomato and cucumber. top with some dill.
- Eat and enjoy!
