Open Faced Shrimp Sandwich

I made this recipe to celebrate Swedish midsummer, and oh my goodness, it tastes like Sweden! It is very close to a Swedish shrimp sandwich I had in Norrland that I absolutely loved. I will have to make that soon.

For now, here is the open faced shrimp sandwich version.

Ingredients

  • Tunnbröd (purchased from IKEA) or bread
  • frozen shrimp
  • mayonnaise
  • butter

  • tomatoes
  • cucumber
  • hard boiled eggs
  • dill

Directions

  1. Run your frozen shrimp through cold water until it is defrosted. Mix with some mayonnaise, just enough. If you do too much it may become watery.
  2. Butter your bread. Add sliced eggs, shrimp, sliced tomato and cucumber. top with some dill.
  3. Eat and enjoy!
